Black lentils – the new superfood

Although Bulgarians are usually fans of traditional lentils, we recommend that you give black lentils a try – it is among the superfoods with many benefits for the body and a long list of useful substances in its composition.

Black lentils are rich in protein, B vitamins, magnesium and fiber. It is especially necessary if you do not consume meat. 100 grams of black lentils have 340 calories, 0 fat, 60 g carbohydrates and 25 g protein.

As we said, it is an excellent alternative to meat, but it can also be eaten as a side dish. It has a similar composition to black beans, but the taste is slightly different.

Black lentils recipe

To prepare the recipe:

• 1 tea black lentils;
• A spoonful of olive oil;
• A spoonful of butter;
• Half a spoonful of finely chopped onion;
• 1 clove of garlic or more/less as you wish;
• half a teaspoon of finely chopped carrots;
• Stock cube;
• 500 ml of water;
• Salt and pepper to taste.

Method of preparation:

Start heating the fat – first add the olive oil, then the butter. Then add the onion, garlic and carrots. Fry until smooth, and after softening, put the broth in the pot. The stock has previously been dissolved in hot water (500 ml). When all the ingredients are in the pot, reduce the heat and stir constantly. It takes about 35 minutes to fully cook the lentils.

You can use black lentils as a main dish and side dish for various meats, salads and other dishes. You can prepare a larger quantity and store it in the refrigerator for several days. That way, when you don’t have a meal ready, you’ll always have a delicious, high-protein meal on hand.

Black lentils are also known as beluga, you can find recipes online in various variations: soup, salad, cream soup, bread with black lentils, beans with black lentils, black lentils with seafood, etc.

An interesting fact is that it is also called beluga, because the small specimens resemble the roe of the beluga (or moruna) fish.
