Tomato season is in full swing. Now is the time to enjoy them to the fullest. It will be even better if you have homemade products, but store-bought ones will do just as well.
Bulgarians have a traditional cold soup, namely everyone’s favorite tarator. However, today we will tell you how gazpacho gazpacho is made!
1 kg tomatoes, cut into quarters
2 cucumber cucumbers, peeled and sliced
1/2 red pepper, chopped
1 clove of garlic, minced
2 spoons wine vinegar
1/2 tsp. the water
Freshly ground black pepper
2 slices of country bread, cut into cubes
2 spoons thinly sliced basil
Method of preparation:
Combine the tomatoes, cucumbers, pepper, garlic, vinegar and water in the bowl of a food processor or blender. Blend until smooth, then add the buttermilk and mix to combine. Taste and add more salt, pepper and vinegar if needed. Cover and refrigerate.
Meanwhile, in a large skillet over medium heat, add a little olive oil to coat the bottom of the pan. Add the bread and stir occasionally until golden and crispy. Remove from heat, season with salt and let cool.
To serve, ladle the soup into bowls and sprinkle with basil, croutons and a few drops of olive oil.
