Unlike other legumes, lentils do not need to be soaked. It is enough to wash the lentils before cooking to remove any dust or other particles that have entered the pot.

Always cook lentils in a large pot, because the broth expands 2-3 times in volume. Also remember that lentils are cooked in a 3:1 or 4:1 ratio – 3 to 4 cups of water to 1 cup of lentils.

Regular lentils cook in 15-20 minutes, while red lentils take about 7 minutes.

It is important to know that lentils are salted and flavored when they are ready. If you cook lentils in salted water, they cook more slowly and will almost certainly be very tough even when cooked.

  2. When the lentils and vegetables are cooked, add the broth and spices.

  4. Serve with aromatic and crunchy croutons
